Cuban Black Bean Soup


Something new for this week, Cuban Black Bean Soup!

This was perfectly well balanced and absolutely delicious with a tasty blend of spices and vegetables with the star of the show being healthy and nutrient rich black beans 🌶

Important Note: this recipe was largely inspired by @FeastingAtHome -- we put a couple spins on our version but thank you for the inspiration!


INGREDIENTS:

- 1 red bell pepper

- 1 onion

- 6 cloves garlic

- 3 serrano peppers

- 1 small can tomato paste

- 1 cup black beans

- 32 oz vegetable broth

- 16 oz water

- 1/4 tablespoon chili powder, smoked paprika, cumin

- 2 bay leaves

- 1/2 tablespoon salt

- ! small bunde Parsley and 1 scallion stalk finely chopped for topping


PREPARATION:

- Dice all veggies and mince garlic

- In Instant Pot, saute onion, garlic, peppers, salt and saute for 10 minutes until soft

- Fold in tomato paste and add seasonings (chili powder, smoked paprika, & cumin), saute for 1 minute

- Pour in broth and water, bay leaves, and beans

- Safely put on lid and pressure cook on high for 30 minutes

- Once safe, open lid and split soup in half (carefully remove bay leaves)

- Blend half of the soup with an immersion blender

- Mix in parsley and green onion (leave enough for topping)

- Pour half of soup from bowl back into pot and stir well

- Pour into bowl, top with parsley and green onion (pickled onions or avocado are other great topper)
