Green Energy Booster Soup

We're keeping it simple this week and didn't record a video recipe for this blog.


This recipe creates a delicious soup OR juice :) It is a one of a kind authentic Soup Troupe recipe that is destined to delight. This soup is so versatile, could be used as a pasta sauce, over rice, you could also add any meat or protein to your preference.

INGREDIENTS:

1 bunch asparagus

2 white potatoes

1 red onion

1 bunch of green onions

4 cloves minced garlic

1 bunch kale

4 tablespoons butter

32 oz chicken broth

16 oz water

Seasoning: salt, pepper, smoked paprika, coriander

Olive oil for topping


PREPARATION:

Chop all veggies (asparagus, kale, onion, potato, green onion)

Separate the white portion of the green onion from the green portion

On saute mode, melt better and add garlic, onion, coriander and just the whites of the green onion

Once reduced, add asparagus, kale, potato, and remainder of green onion to the pot

Pour chicken broth, water, and season per preference

Pressure cook on normal for 25 minutes

Once safe, open lid & blend with immersion blender until smooth

Add another pat of butter and stir until blended to thicken a bit

Pour into your favorite bowl & top with olive oil & smoked paprika ;) -- ENJOY!
