Italian Lentil & Endive Soup Pt. 2
INGREDIENTS
1/2 diced onion
6 sliced garlic cloves
1 cup red lentils
2 cups veggie broth
2 cups chicken broth
2 diced belgian endive lettuce
1/2 cup hempseeds
1 can crushed tomatoes
1 parmesan rind
1 cup corn
1 stalk celery (diced)
2 bay leaves
2 tablespoons chopped parsley
1 tablespoon oil
1 tablespoon ghee or butter
1/4 tablespoon salt
1/4 tablespoon italian seasoning
1/4 tablespoon cayenne pepper
PREPARATION
Prepare all veggies
Pour oil and ghee or butter into Instant Pot on saute mode
Pour in onion, garlic, celery, corn, parsley, endive
Saute for 10-15 minutes, pour in seasoning halfway through
Pour in lentils, crushed tomato, parmesan rind, veggie broth, chicken broth, hemp seed and bay leaves
Pressure cook on normal for 15 minutes
Safely open lid and remove bay leaves
Stir very well and pour into bowl
Garnish with more parmesan and parsley; ENJOY!!
