Kale & Potato Soup



Hi Soup Troupers! I am back with another soup recipe after a bit of a hiatus. This kale and potato soup is a delicious treat for your summer! Strongly suggest trying this with some toast and crackers


INGREDIENTS

  • 2 diced potatos

  • 1 head of kale (chopped)

  • 1 diced shallot

  • 1 diced carrot

  • 1 tablespoon roasted garlic paste

  • 1 diced celery stalk

  • 2 cups chicken stock

  • 2 cups vegetable stock

  • 2 tablespoons creole seasoning

  • 1 parmesan rind

  • 2 tablespoons olive oil

PREPARATION

  • Prepare all vegetables

  • In Instant Pot, or dutch oven, add oil and saute celery, carrot, roasted garlic, shallot and seasoning until translucent

  • Once veggies begin to sweat, add in potato and all stock

  • Next, add in kale, parmesan rind, and additional seasoning to preference

  • Safely add lid and pressure cook for 25 minutes on high (or simmer on low for 90 minutes)

  • Once safe, open lid and blend with immersion blender to preference

  • Pour into bowl, top with topper of your choice! (we used parmesan crisps and crispy onion)
