Salmon Chowder

If you're looking for a tasty, creamy, delicious soup to sooth you during this cold storm, this is the perfect choice!
INGREDIENTS:
2 cups veggie broth
1 cup chicken broth
1/2 cup water
2 salmon filets (chopped into small pieces)
1 small diced onion (or 1/2 large)
2 minced garlic cloves
3 diced carrots
2/3 cup rice
1 diced potato
1 stalk celery (diced)
3 tablespoons butter or ghee
1/2 pint half and half
1 cup shredded cheese
1 stalk Scallions
1 tablespoon dillweed
1/4 tablespoon chili powder, black pepper, Italian herbs, cayenne pepper
PREPARATION:
On saute mode in Instant Pot (or in a dutch oven) pour in butter or ghee
Add onion, garlic, and whites of scallions
Saute for 1 minute until aromatic
Pour in celery, carrot, potato, dillweed, italian seasoning, chili powder, salt, pepper, cayenne pepper
Pour in all broth, water, and rice
Put on lid and pressure cook on high for 20 minutes (or simmer for 90 minutes)
Once safe, open lid and mix in cheese, stir well
Add salmon and pour in cream, stir very well again
Voila, you are ready to serve! Enjoy!
