Umami Italian Wedding Inspired Soup

We call this "inspired" by Italian Wedding Soup because there are clear differences... but this was a unique and fun spin on a classic and beloved soup recipe.

4 vegan sausages

3 cups of spinach

1.5 cup of broccoli

1.5 cup of cauliflower

2 cups of mushrooms

2 table spoons of garlic

32 oz chicken broth

24 oz water

2 cups of harvest grains

2 tablespoons butter

Seasonings: salt, pepper, umami seasoning, hot sauce


Chop mushrooms & cut sausage into small disks

On Saute mode, add butter & reduce

Add sausage to the pan, lightly brown on one side and flip occasionally

Once sausage is nicely brown on both sides, add mushrooms and spinach

Stir so spinach begins to shrink & add harvest grains, water, broth, and garlic

Pressure cook on normal for 30 minutes

Once safe, open pressure cooker and stir soup

Add all seasonings and hot sauce and stir one more time

You are done!
