Me being me, I forgot an essential item.... BREAD! It was still phenomenally delicious & beautiful without it.
I used Cook's Best Soups as inspiration for this recipe. This is actually the first in a series of soups from Cook's Best Soups & Stews that I will be sharing. I picked this magazine up a couple months ago but I still haven't used it. It has 50+ soup recipes so... more will be coming at you VERY soon! 3 lbs onions
1 lb shallot
3 tablespoons butter
½ cup vinegar (apple cider preferred, I used rice)
4 cups chicken broth
1 tablespoon brown sugar
4 cups beef broth
2 sprigs rosemary
2 slices of gruyere, swiss, or havarti cheese
Parsley (do not chop)
Chop onions & shallots
Dice butter into small pieces
Add onions, shallots, butter, salt, pepper, vinegar, chicken broth, beef broth, rosemary & parsley into pressure cooker
Pressure Cook on Regular for 25 minutes
Once safe, open pressure cooker, remove rosemary & parsley then stir soup
Pour soup in a small porcelain dish & float a round of toasted bread on the soup & layer cheese (havarti, gruyere, swiss), sprinkle cayenne pepper and or paprika if desired
Place dish into oven for 10 minutes or until cheese is melted
Safely remove (optional)
& ENJOY! <3
This was lightly creamy, definitely decadent, and to be honest, I didn't miss the bread. But to each their own, live yo life!
