Quarantine Veggie Noodle Soup

Hi there soup lovers! Back with another video recipe of this divine noodle soup. It's like Campell's, but way, way better.

I ate one can of Campbell's recently, and my body was not happy with it! I was surprised at the reaction! But I would totally make a heaping vat of this instead to last weeks (frozen, of course).

I just have to add, I am SO grateful our stores are still open (BIG shout out to all the grocery store workers, medical professionals, service workers, delivery people, basically, anybody still out there fighting the good fight). W ho knows what is going to happen, but for now, I am so grateful to be able to cook still with fresh, beautiful ingredients.

Also, let me know if you like the video format. I have enjoyed editing videos & making these. They're far from professional, but I'm working on it.

And without further ado...


Noodles (eyeball how much you like)

1 bell pepper

1 shallot or onion

3 carrots

1 zucchini

1 bushel green onion

2 tablespoons garlic paste

64 oz broth or bone broth (choose your preference!)

2 tablespoons butter

8 oz water

Soy sauce (to taste)

Spices: curry powder, black pepper, salt, hot sauce (optional)
