Creamy Winter Chowder

I'm so excited to share my newest recipe creation and FIRST soup in my Instant Pot!!<3 This is a personal creation made by random inspiration walking around Trader Joe's.

It's a creamy, healthy winter chowder with leeks, spinach, mushrooms, kidney beans & more! Peep the recipe:

INGREDIENTS:

  • 2 leeks

  • 6 oz mushrooms

  • Shallot

  • 4 oz spinach 

  • Qt chicken stock 

  • pint heavy whipping cream 

  • 12 oz kidney beans

  • 10 oz English peas 

  • 3 table spoon garlic

  • 4 oz pancetta 

  • 2 table spoon coconut oil 

  • 1/4 cup cornstarch slurry

  • *6 red potatoes (optional - I forgot to add them but it needed the starch!)

  • Spices: Umami Seasoning (dried onion, ground mustard seed, porcini mushroom powder, white button mushroom powder, crushed red pepper, black pepper, dried thyme), Cayenne Pepper, Himalaya Pink Salt, fresh crushed Black Pepper



Preparation:

  • Chop leeks, mushrooms, potatoes, shallots

  • In Instant Pot, heat coconut oil with chopped garlic and shallots, lightly brown

  • Add in mushrooms, leeks, potatoes and pancetta

  • Continue to brown for 5-10 minutes

  • Add Umami Seasoning and spices to preference

  • Lightly deglaze the bottom with a splash of chicken stock, mix well

  • Add in additional chicken stock and a quarter cup of water

  • Add in spinach, kidney beans, and peas

  • Pressure cook on medium for 35 minutes

  • Once safe, open Instant Pot and mix soup. Let cool for 15 minutes.

  • Add in heavy whipping cream and cornstarch slurry

  • Optional: pressure cook on low for 15 more minutes (I did this and it added a nice fullness to the chowder)
